Fuchsia Dunlop is a James Beard award-winning food writer and cook specializing in Chinese cuisine. She trained as a chef at the Sichuan Higher Institute of Cuisine in the 1990s and has been researching Chinese culinary culture ever since. Fuchsia is the author of seven books and a regular contributor to magazines, newspapers, radio and television. Writer, editor, and photographer Joe Yogerst is home again along the coast of Southern California after many years living abroad and working as a journalist and magazine editor in South Africa, Britain, Hong Kong and Singapore.

After starting his professional career as an editor at Soccer America magazine in the San Francisco Bay Area, Joe worked as a freelance journalist in South Africa for the Washington Post and the Geographical Magazine (UK), a general assignment reporter for a suburban London weekly newspaper, managing editor of Cathay Pacific's award-winning Discovery magazine in Hong Kong, and a business reporter for the International Herald Tribune in Singapore.

Introduction
Jonathan Glancey is a London-born journalist, critic and author. He has lived in many parts of the world, including India and the Spanish Pyrenees, and in recent years in the Scottish Highlands, Venice and the Suffolk-Norfolk border in the UK. His interest in architecture is life-long as is his fascination with design and engineering in all their many forms and his fondness for dogs, birds, aircraft, steam railway locomotives and dragonflies.
